Ingredients:
•4 boneless, skinless chicken breasts
•1/2 cup store-bought pesto (or homemade if you prefer)
•1-2 large tomatoes, sliced
•8 oz fresh mozzarella, sliced
•Olive oil
•Salt and pepper to taste
•Fresh basil (optional for garnish)
Instructions:
1. Cook the Chicken: Heat a drizzle of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Cook for 5-7 minutes per side, until golden brown and fully cooked (165°F internally). Remove from heat.
2. Assemble: Spread a generous amount of pesto on each chicken breast. Layer with tomato slices and top with mozzarella.
3. Melt the Cheese: Lower the heat and cover the skillet for 2-3 minutes, allowing the mozzarella to melt slightly. Alternatively, pop the chicken under the broiler for 2 minutes to melt the cheese faster.
4. Serve: Garnish with fresh basil, if desired, and serve with a side salad or some roasted veggies. Enjoy your flavorful, simple meal!
Tips:
•Feel free to swap the pesto for a jar of store-bought sauce to save time.

You can cook in the oven at 350 as well if you have the time!
